Think buttery graham crumbs, chewy coconut, and little bursts of tangy pineapple in one sunny square. These pineapple coconut magic bars use dried pineapple instead of canned fruit, keeping the layers chewy and sliceable without a wet middle.
The assembly is satisfyingly simple: press the crust, scatter the toppings, and pour over the condensed milk. Most of the patience comes afterward. Give the pan time to cool before cutting, and those coconut edges will hold their shape.

Before you begin
You will need: 8-inch square metal baking pan, parchment, mixing bowl, measuring cups, wire rack.
Makes 16 bars. Prep: 15 minutes. Cook: 30 minutes. Cooling or chilling: 120 minutes. Total: 165 minutes; optional extra chilling is not included.
Gather your ingredients

- 1 1/2 cups (150 g) graham cracker crumbs
- 6 tablespoons (85 g) unsalted butter, melted
- 1/4 teaspoon fine salt
- 3/4 cup (128 g) white chocolate chips
- 3/4 cup (about 115 g) dried pineapple, cut into 1/4-inch pieces
- 1 1/2 cups (120 g) sweetened shredded coconut
- 1 can (14 ounces/396 g) sweetened condensed milk
Let’s make it

- Heat the oven to 350°F (175°C). Line an 8-inch square metal pan with parchment, leaving handles on two sides.
- Mix the graham crumbs, melted butter, and salt until evenly damp. Press firmly into an even layer in the pan.
- Scatter the white chocolate chips and dried pineapple evenly over the crust, then add the coconut. Slowly drizzle the condensed milk over the whole surface, reaching the corners. Gently press the toppings down with the back of a spoon so they contact the milk.
- Bake for 25–30 minutes, until the edges bubble and turn golden and the top has golden patches. Tent loosely with foil if the coconut browns too quickly. The center may still look a little soft; it firms as it cools.
- Cool completely in the pan on a rack for at least 2 hours. For especially neat cuts, chill the cooled pan for another 30 minutes. Lift out and cut into 16 bars with a sharp knife.
A few crafty little tips
- Dried pineapple is the key to this version. Drainage alone does not make canned pineapple an equal swap; it still brings much more water.
- Cut large pineapple chunks before measuring. Small pieces make the bars easier to slice and spread the fruit through every bite.
- Press the crust firmly, but do not grind it into a rock-hard layer. A flat measuring cup makes an even base.
Make it your own
For a nutty version, replace 1/4 cup of the white chocolate chips with 1/4 cup chopped macadamia nuts. The bars already contain plenty of sweetness, so extra syrup or glaze is unnecessary.

Store it for later
Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Separate layers with parchment. Freeze individually wrapped bars for up to 2 months; thaw in the refrigerator.
Quick questions
Is evaporated milk the same thing?
No. Sweetened condensed milk is thick and sweet and helps bind these layers. Evaporated milk will not work in its place.
Why did my bars fall apart?
They may have been cut warm, or the crust may not have been pressed firmly enough. Let the pan cool fully, then chill before cutting if the kitchen is warm.
Pack these sunny squares between sheets of parchment for sharing, or tuck a few into the freezer for another day.
